The 2021 vintage is a much more lifted, fresh, and vibrant expression of Cabernet Sauvignon. Tooth and Nail Wine Company sustainably farms their own grapes and crafts all of their wines in Paso Robles, California.

Tasting Notes:
The 2021 Cabernet Sauvignon is driven with fresh black raspberry, cherry, and some blue fruit with underlying minerality and verve which is one of the hallmarks of the 2021 vintage. The flavor profile is loaded with rich and energetic flavors of creme de cassis, blueberry and raspberry and structured by medium acidity and soft tannin.
The 2021 Cabernet Sauvignon will offer a great deal of enjoyment out of the gates and will have the ability for long term ageing.

Growing Notes:
2021 was one of the most mild growing seasons to date. Heat spells were non existent post veraison and other than a small amount of rain in October, the winery had the ability to harvest the vineyards at their leisure.
Harvest Dates: October 13 – November 1, 2021
Winemaking Notes:
All grapes indeed destem and ferment in mostly stainless steel with small percentages being fermented in concrete. After seven to ten days of warm extraction. The new wine was pressed off the skins and into stainless steel tanks to finish fermentation. A maneuver designed to maintain a pure tannin profile while avoiding any uptake of phenolic astringency.
After fermentation, the individual lots were aged in French oak barrels (25% new oak) for 6-10 months prior to blending and bottling. The resulting wine has the verve, tenacity, and vibrancy we know and love in Paso Robles Cabernet Sauvignon.

Founded by grower Rob Murray, Tooth & Nail Wine Company followed a path of true grit and determination to find success in Paso, a tough place to grow grapes and make wine. Rather than battle nature, they bottled it–fighting tooth and nail to create wines they could be proud of. Whereas wines that embrace the elements in the pursuit of excellence. Wines for people who simply love wine.
Today they grow four unique brands of wine. Each distinctively devises to avoid the dominance of the winemaker’s hand and express the native energy of this region. Led by winemaker Jeremy Leffert. However their process accentuates the character of the product instead of obstructing it. The results are wines that are as adaptive and exciting as the journey the winery takes in crafting them.
The Tooth & Nail Squad furthermore is the brainchild of owner-winegrower Rob Murray, who worked with local design studio. Ethur Ethur created the renegade characters on the labels and to build the imaginary world they live in. Along the way, Jeremy executed his own creative vision for the wine inside the bottle.
