About The Fableist Chardonnay 2023
- Color: Light gold
- On The Nose: Melon, honeydew, cantaloupe, zest of orange, white peach, ginger, sea salt, wet stone
- On the Palate: Lemon drop, green apple, lemon meringue, Crème Fraîche, soft cream
- Finish: Medium, crisp, lively, mineral
7 months in 15% New French Oak, 85% Neutral French Oak
100% Chardonnay. Fruit harvested based on acidity to preserve brightness and sent directly to the press. Fableist Chardonnay Edna Valley was fermented with native yeast. 60% fermented in barrel. Moreover the remainder fermented in stainless steel. The winemaker utilized daily batonnage on the barrel ferments to balance out the bright acidity.
Sustainable winemaking, no additives, vegan. Native yeast fermentation and minimal sulfur.
