About 2021 Austin Hope Cabernet Sauvignon:

• Color: Dark ruby
• On the Nose: Fresh black currants, violets, ripe blackberries, mocha, dried spices, cedar, vanilla, oak, smoke
• On the Palate: Black cherry, olallieberry, dark fruits, clove, nutmeg, vanilla bean
• Finish: Long, smooth, rich

This Cabernet aims to showcase the best of Paso and its unique qualities, including its beautiful landscape, ideal growing conditions, and abundant potential. The goal was to produce wine that’s truly representative of the region’s unique terroir and climate.

After harvest of the grapes. Select vineyard lots fermented individually in stainless steel tanks for 10-14 days. Extended macerations that carefully managed pump overs, enhanced the extraction of color and tannin. The lots separated for 11 months.

Through a combination of tasting and analytics the best lots became determined, and initial blend assembled in late summer of 2022. However, this blend aged an additional two months in 75% new and 25% once used French Oak.
